Good question, Laura.
If it's fútbol (soccer), probably any TV in the country, as long as there isn't a game in Ecuador that's on TV.
As for the rest of the Olympics, you could try the sports bar at Milenium Plaza. California Kitchen may be showing some of it as well.
And the Balcón Quiteño restaurants may also have some on.
