Do you know if one is allowed to bring unopened food into the country via checked baggage? When we visited we found a lack of some of our fav food items, i.e., decent salad dressings.

While we've had success with bringing foods in via our luggage (and had family members bring things for us), I can't promise that you'll make it through without problems.
Luggage is scanned before you leave the airport (Quito or Guayaquil), but they're usually looking for electronics and other high ticket items that they think you may be bringing into Ecuador to sell.
If you don't have anything like that in your bags, then you might make it through with a few foodstuffs, since they won't have much incentive to pull you aside and open your bags. But make sure any foods are still in their original packaging.
